Shrikhand is a creamy and delightful Indian dessert made from strained yogurt. It’s traditionally flavored with cardamom and sugar but can be elevated with additional flavors like mango or saffron.
Ingredients:
For the Basic Shrikhand:
2 cups plain yogurt (preferably full-fat)
1/2 cup powdered sugar (adjust to taste)
1/2 teaspoon cardamom powder
A pinch of salt
For Extra Flavor:
Mango Flavor: 1 cup ripe mango puree
Saffron Flavor: 1/4 teaspoon saffron strands soaked in 2 tablespoons warm milk
Nutty Flavor: 1/4 cup chopped nuts (like almonds and pistachios)
Coconut Flavor: 1/4 cup fresh grated coconut
Instructions:
Step 1: Prepare the Yogurt
Place a muslin cloth or fine sieve over a bowl. Add the yogurt to the cloth and let it drain for 2-3 hours, or until it becomes thick and creamy. This step is crucial for achieving the perfect texture.
Step 2: Mix the Ingredients
In a mixing bowl, transfer the strained yogurt. Add powdered sugar, cardamom powder, and a pinch of salt. Mix well until the sugar dissolves completely.
Step 3: Add Extra Flavor
Depending on your flavor choice, gently fold in the additional ingredients:
For Mango Shrikhand: Add mango puree and mix well.
For Saffron Shrikhand: Mix in the saffron milk.
For Nutty Touch: Add chopped nuts.
For Coconut Flavor: Fold in fresh grated coconut.
Step 4: Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours. This allows the flavors to meld and the shrikhand to chill.
Step 5: Serve the Shrikhand
Once chilled, serve the shrikhand in individual bowls. Garnish with additional nuts, saffron strands, or a sprinkle of cardamom powder for an appealing presentation.
